Orecchiette

Ingredient

 

1100 grams of flour
 
A small amount of white granulated sugar
A moderate amount of brown sugar
500g vegetable oil
1250 ml of pure milk

 

Steps

Place 500g of flour in a bowl, add a small amount of sugar, then pour the pure milk into the flour in turn, knead the dough, then wrap the dough in plastic wrap and let it sit for 15 minutes.

Pour the brown sugar and milk into a bowl and stir well. Pour 500g of flour into the bowl. Pour the prepared brown sugar and milk into the flour. Use chopsticks to stir into a floc shape and knead into a dough. Then wrap it in plastic wrap and wake up for 15 minutes. (the color in the picture)

Take out the two pieces of dough and knead them a little more. Place the brown sugar dough on top of the white sugar dough (if not sticky, spread a layer of pure milk in the middle) and roll tightly. Wrap in clingfilm and refrigerate for 1 to 2 hours (easy to thin to firm) Remove the frozen dough and cut into thin pieces.

Fry in a pan of hot oil.

Notice

1. Be sure to freeze and then fry over low heat.

3. The thinner the dough, the crisper it tastes and the easier it is to fry.
